Life is sweet without the sugar

Chocolate Fondant: I used to love love love Gu chocolate puddings and now that it has got colder I fancied a hot pudding. This was my first attempt and i'll certainly be making it again. It serves 4 and the mixture can be made prepared in advance and kept in the fridge for a day.

 

Ingredients:

  • 90g of 100% chocolate/cacao (I use Willies cacao, http://williescacao.com/fine-chocolate/home/)
  • 112g dairy free spread
  • 84-90g xylitol (depending on how sweet you like your chocolate)
  • 2 eggs
  • 2 egg yolks
  • 3 tbsn rice flour or gluten free flour

 

Melt the chocolate and dairy free spread in a bain-marie and remove from heat to cool when melted

Whisk the eggs and xylitol together in a food processor until pale yellow and fluffy

Empty the chocolate and dairy free spread into a large bowl and gently fold in the eggs

Finally gently and gradually fold in the flour

Spoon the mixture into 4 ramekins

Bake at 190 degrees for 15-20 minutes or until the top is firm to touch

Serve and eat imediately
