Buckwheat & Chestnut Flour Soda Bread: So i've dabled in a bit of spelt but my body is still not too keen on gluten so I discovered the Doves Farm gluten free buckwheat soda bread recipe and made it a bit lighter. This is by far my favourite loaf that I've made so far. I love it toasted with hummus or almond butter.
Ingredients:
Mix the flours, salt, baking powder, linseeds and xathan gum thouroughly
Add the milk, oil and vinegar and mix thoroughly until you get a slightly sticky dough
Place on a well floured (handful of the flour of your choice) baking tray and pat and roll into a long cylinder almost the length of the tray, width of you hand and aprox 5 cm high
Bake in a pre heated oved at 200c for 75-85 minutes or until cooked.
